A family staple. I dislike box cake mixes and do not use them. This is really almost as fast and way better in the taste department!
2 1/4 cup all purpose flour
1 1/3 cup sugar
3 tsp. baking powder
1/2 tsp. salt
1/2 cup butter, softened
1 cup milk
1 tsp. pure vanilla extract
2 eggs

Combine dry ingredients in mixing bowl. Add butter, milk and vanilla. Turn to low mixer speed (on my kitchenaid, speed 2) and mix for 1 minute. Stop and scrape bowl. Add eggs one at a time and continue to mix at low speed for 30 seconds. Stop, scrape bowl. Then turn mixer to high (kitchenaid's speed 6) and beat for 1 minute.
Grease and flour two round cake pans and divide batter between pans. Bake in a preheated 350 degree oven 25-35 minutes until toothpick comes out clean. This cake is still good a bit dry but tastes tons better if you catch it early. :) Frost as desired...
If you are going to do cupcakes, the time is 15-18 minutes.
