Vegan Brownies

I'm making these today for a homeschooling friend who is in need of some TLC. They have food allergies to nuts, dairy and eggs...this should fit the bill!

Vegan Brownies

2 c. unbleached all purpose flour
2 c. white sugar
3/4 cup unsweetened cocoa powder
1 tsp. baking powder
1 tsp. salt
1 c. water
1 c. canola oil
1 tsp. pure vanilla extract

Preheat oven to 350 degrees. In a large bowl, stir together the flour, sugar, cocoa powder, baking powder and salt. Pour in water, vegetable oil and vanilla; mix until well blended. Spread evenly in a 9x13 inch baking pan.

Bake for 25 to 30 minutes in the preheated oven, until the top is no longer shiny. Let cool for at least 10 minutes before cutting into squares.

The recipe says these are very gooey...I'll be back with a review, soon! :)

ETA: These turned out so well! Dd, Meg, said these are the best brownies she's ever tasted...I liked them a lot, too--these would be great to make when you need that chocolate fix but are out of eggs and butter! :) This recipe also makes quite a few brownies--I gave half to my friend and kept half for me the kids.

Here they are--ready to go to my friend--we sprinkled them with powdered sugar to make them prettier.
